Why can’t you boil water in a kettle twice?

The World Wide Web is full of headlines that running water cannot be boiled twice. But why? Indeed, logically, double or triple boiling of a liquid is guaranteed to kill the harmful microorganisms that are in it. In practice, the situation is somewhat different - it is not only a matter of microorganisms.

Chemistry will help us understand this issue. Water is not just a combination of two hydrogen atoms through one oxygen atom. It is also an environment inhabited by many beneficial and harmful microorganisms. Unfortunately, even cleaning the liquid at a high technological level does not guarantee the complete absence of microflora at the outlet.

What happens to running water if boiled a second time:

  • If at the first boiling of the liquid the number of harmful microorganisms rapidly decreases in it, then at the second boiling the organic component decays, which can adversely affect human health.
  • Scientific fact: hydrogen atoms are partially split and, entering into a bond with other harmful elements, settle to the bottom of the container or dishes, thereby gradually increasing the density of the liquid.
  • If you boil water more than once, then the beneficial substances contained in it decompose. Instead, they form (in small quantities) harmful compounds such as fluorine and arsenic. Or, for example, nitrates, which under the influence of high temperatures cease to be safe additives and turn into harmful nitrosamines.
